Guacamole and Salsa for 10-20 Peeps

Two homemade Salsas and a freshly made Guacamole?  Sold!  This is a great option for a crew of endless munchers.  The Salsas are delicious and if you serve them up with some Guac it will keep your friends and family content for HOURS πŸ™‚

Chipotle Cheese Bean Dip

This is a cheesy, chipotle-infused concoction that creates loads of happy faces.  Serve it with your choice of chips, veggies, or fingers πŸ™‚

Spicy Black Bean Nachos

The simple combo of chips, cheese, and these chipotle-infused black beans is all you need for an epic batch of Nachos, so you can consider all the other fixings a bonus.  Fresh Pico de Gallo on top is a real treat so please keep that one in mind πŸ™‚

Quick Batch of Pinto Bean Soup

This Quick Batch of Pinto Bean Soup is a great example of how forgiving Mexican soup recipes can be.  I was low on tomatoes, lacking chipotles, and stuck with some generic canned beans….and it was still delicious πŸ™‚

Spicy Queso Dip

Queso Dip has to be right up there with Nachos for the #1 spot on the appetizer table.  Flavor your Queso with a tomato-chipotle mixture and you’ll have some happy campers in the house.

Spicy Beef and Cheese Empanadas

It’s true, of all the recipes in the list these Empanadas take the most work because we are building the the pastry dough from scratch.  But when they’re fresh out of the oven they are worth every ounce of effort πŸ™‚

Avocado Salsa Verde

This is a great all-purpose Salsa for the appetizer table.  You can plop it next to some chips or use it as a topping for tacos, tostadas, etc.

Beef  Taquitos

I usually bake taquitos as they get pretty close to the fried version but without all the grease!   I used a chipotle-infused ground beef for this batch and dipped them in some freshly made Salsa de Aguacate.  Yessssirreee πŸ™‚

Vegetarian Stuffed Poblanos

Stuffed Poblanos are wildly versatile and a great way to invigorate your kitchen.  I stuffed these with a simple beans-and-rice mixture and then loaded them up with Queso Fresco and pickled onions — so good!

Roasted Jalapeno Soup

Consider yourself warned on this one — this Roasted Jalapeno Soup is delicious AND fiery!  I typically use some potato to dilute the heat a bit, but you can consider that optional if you want an ultra-fiery version πŸ™‚

Quick Bean Dip for Dinner

Here’s another great option for a bean dip.  I like serving this impromptu Bean Dip with crispy, cheesy corn tortillas loaded with fixings — these tortilla concoctions are quite flexible so feel free to get creative with them!

Guacamole in a Molcajete

Making Guacamole in a Molcajete is a real treat!  It’s a throwback to a different time, and when you crush the onion-jalapeno-cilantro mixture in the molcajete it releases some additional flavors that you won’t get from traditional chopping.  A great option to keep the teenagers or young ones occupied for a bit πŸ™‚

Burrito Bar

Okay, technically not an appetizer, but if you keep these fixings in the fridge your friends and family will be able to meander into the kitchen and make a burrito any time of the day.   All while you cozy up on the couch πŸ™‚     Okay, I hope you have some new appetizer ideas for your friends and family!  Let me know if you have questions about any of them.    Enjoy!       Here’s the latest post:  New Year’s Grocery List for Easy Mexican Recipes
