I make impromptu versions of these Bean Tostadas all the time!  That’s one of the main benefits of keeping some of these refried beans in the fridge.  Top your Tostadas with avocado bits and just like that dinner is served 🙂

Here’s the easy “bake your own tostada shells” method.  Simple rub some oil on both sides of corn tortillas and bake each side for 4-5 minutes in the oven.  It’s a super easy technique that I use all the time — be sure to use thin corn tortillas for best results.

Here’s a great recipe for that ground beef that’s sittin’ in your fridge!  I love infusing ground beef with the smoky heat of chipotles so that’s what I did for this batch.  And then I topped these Tostadas with cabbage, Queso Fresco, and a squeeze of lime…and they were off-the-charts delicious 🙂
